Edamame & Pea Salad

I personally think this “salad” tastes delicious. I’m not a big fan of salads, but I think this has a lot of substance to actually fill you up on. And I think it’s pretty easy to make since there’s no cooking involved.

1/4 cup extra virgin olive oil
1 cup of artificial bacon bits (most of the bacon bits in the grocery stores (McCormick/Bacos) don’t contain any animal products, but check the label! I use the McCormick “Bac’n Pieces Chips”. You could also make your own!)
1 Vidalia onion
1 large garlic clove thinly sliced
1 cup frozen shelled edamame thawed
1 1/2 cups frozen peas (6 oz.) thawed
2 cups sugar snap peas
3 tbsp fresh lemon juice
1 tsp Dijon mustard
2 tsp coarsely chopped mint
kosher salt & ground pepper (if you want, the bacon bits do add a bit of saltiness already though)

Basically, get all the ingredients, put them in a bowl and mix them together. Let it sit for at least 40 minutes to soak in the flavors, and you are set!

Serves 4 people

I usually double everything so that I can save it and eat it later. It saves really well.
